Well when I got my Gerbils they wouldn't let me hold them at first either. He needs to get used to you. Try just putting your hand in his cage. He should be curios and sniff it, give him food by hand let him know you are a friend not an enemy. Then start picking him up inside the cage but don't remove him. Remember he is still getting used to you.
I have an "albino" too really they aren't albino because they have become so commen if he has
red eyes he would be called a Red Eyed White or a REW I also have a Brown Gerbil. Gerbils are friendly and like to live together.
Your gerbie just might miss his friends. Don't forget it just takes time and patience.
