Could it be that he is drinking, but because he's been drinking so much extra lately, you don't notice him drinking when he drinks normal amounts?
Did the vet tell you to try to force feed him water?
Because if he's eating himself again, I would think that he's probably drinking himself too. Plus if he's peeing, then he must be drinking something at least.
If you use a
water bowl, what about switching to a bottle for awhile? Then at least you can see how much the water goese down so you'll know exactly how much he's drinking.
