I use an odour absorbing paper based kitty litter in my mouse house. they love to di in it and it helps with the smells.

You don't have to wait to start holding them. It's not like with hamsters. The tail rattling thing means they're scared, but they'll get over that. If your afraid your going to smash their body by chasing them all over their cage than lift them by the base of the tail.
You won't have to do this forever though. Soon enough they will just climb on to your hand when you lower it into the cage. Don't worry about them biting. Mice hardly ever bite.
