I have been vegetarian since April (?) and I have found that it requires very little modification of my eating habits. Before going veggie, I ate a lot of pasta, rice, potatoes, etc. Basically, I just cut the meat out. Some nights I will have beans, rice and tortillas (lard free) for dinner. Other nights, I will have pasta without any meat. All Recipes
has a ton of vegetarian recipes. I DO NOT like tofu and I am not crazy about many of the meat substitues so I really don't feel that they are necessary to go veggie. I do eat a lot of veggie burgers, especially during the summer.
